1 whole wheat tortilla
1/2 cup black beans
2 ounces lowfat or soy cheese, grated
1 tablespoon onion, chopped
1 tomato, chopped
1/2 avocado, sliced
1/4 cup salsa (optional, instead of tomato and onion)
Direction
Chop the tomato and onion, slice the avocado and grate the cheese.
Place the whole wheat tortilla in a nonstick pan.
Spread the black beans and onionon half of the tortilla and top with cheese. Fold over.
Cook on one side and then turn over to cook until cheese melts.
Move to plate and top with tomatos and avocado.
Serve with
